Pulses FAQ

Our pulses are unpolished and nutrient-dense, sourced from chemical-free farms of the Mewar region of Bundelkhand and the ferlite riverbanks of Chamba – both known for the quality of pulses. Grown and minimally processed by women, we take utmost care at every stage of the supply chain to ensure that we bring you clean and fresh produce and of the finest quality.

Katori has four variants of pulses  – Arhar dal, Chana dal, Urad Dal Chilka (with skin) and Moong Dal Chilka (with skin)

Sun dried: Freshly harvested a dal is dried in direct sunlight until its moisture content falls to 8%

Graded: Dried pulses are put through a machine to remove stones and other impurities. Arhar and Chana dal are soaked overnight to remove skins and sun dried a second time.

Seasoned A small quantity of our in-house cold-pressed mustard oil is blended into the pulses to enhance texture, taste and shelf life.

Split & Packed The unpolished dals are passed through a ‘chakki’ (dal mill) to split each grain into two and then packed into resealable pouches

We do not add any chemicals or preservatives to our pulses. Mustard oil enhances taste and acts as a natural preservative, giving our pulses a longer shelf life..

Before hitting the grocery store shelves, most pulses and dals undergo an extensive process of polishing. Polishing is done to mainly increase visual appeal for the consumer.There are different polishing ingredients used such as nylon polish, leather and makhmal polish and the most prevalent being oil and water polishing. Doing so gives each and every grain of the dal a shiny appearance and a uniformity, however  ​they lose a lot of their natural nutrients.

While our pulses may not be shiny and attractive, they are unpolished and unadulterated, keeping their fibre-rich outer layer intact. Unpolished dals also contain a higher amount of protein in comparison to polished dal. This makes them nutrient-dense and superior in taste and flavour.

Commercial pulses come from multiple sources. SInce they are produced and processed in large batches, it is common for produce from different regions and seasons to be mixed together, making it very difficult to trace the source of the end product. Katori dals are from single origin crops meaning that they are procured from our very own network of farmers and processed in small batches, hence each package can be traced back to the grower.

Our pulses are sourced directly from our network of 2500+ small and marginal women farmers without engaging middlemen, thus giving them higher returns.

Our grassroots programmes are providing know-how, tools and inputs, and encouraging farmers to adopt sustainable and organic growing practices, so that they can bring to you produce of the finest quality.

Our pulses are packed in airtight food-grade resealable zip lock pouches. You can store them in the same packaging or transfer them into an air-tight container, in a cool dry place.
